In early Spring, pistachio trees come alive with beautiful, brownish green flowers. From these flowers, pistachio "fruit" begins to develop in heavy, grape-like clusters. Each nut kernel is encased within a fleshy outer skin or "hull." By late summer or early autumn, these hulls turn a rosy green and begin to slip off the shell, which opens naturally along its suture or seam – a sign that the pistachio is ready for harvest. |
| In September, mechanical "tree shakers" are brought in to shake the nuts from the trees and catch them before they touch the ground. Next, the nuts are rushed to our facility where their hulls are quickly removed to prevent staining. During this process, our facility works around the clock. Hulled pistachios are then stored in our silos until they’re ready to be roasted, salted, and packed for shipment. |
