| Preheat oven to 325°F. With a sharp knife, make 24 slits, 1-inch deep over entire pork roast; insert a pistachio kernel and one piece of garlic into each slit. Roast for 1 1/2-2 hours or until internal temperature reaches 170°. Baste with Honey Glaze several times during roasting. Transfer roast to serving platter; cover with foil and allow standing time of 20 minutes. Top with Pistachio Sherry Sauce and serve immediately.
