2-2½ lb. boneless pork loin, trimmed and tied
24whole Sunkist® California Pistachio Kernels
4-5large garlic cloves, cut into 24 pieces
Honey Glaze (see recipe below)
Pistachio Sherry Sauce (see recipe below)


Preheat oven to 325°F. With a sharp knife, make 24 slits, 1-inch deep over entire pork roast; insert a pistachio kernel and one piece of garlic into each slit. Roast for 1 1/2-2 hours or until internal temperature reaches 170°. Baste with Honey Glaze several times during roasting. Transfer roast to serving platter; cover with foil and allow standing time of 20 minutes. Top with Pistachio Sherry Sauce and serve immediately.

Makes approximately 8 servings


Honey Glaze
2Tbsp. honey
2Tbsp. dry sherry
1tsp. fresh rosemary
1/8tsp. ground cinnamon
1/8 tsp. pepper

In small bowl combine all ingredients. Mix well.


Pistachio Sherry Sauce
1Tbsp. honey
3Tbsp. dry sherry
1/4tsp. fresh rosemary

In small saucepan combine all ingredients. Cook on medium heat for one minute.
